This tasty, hearty meal contains plenty of fiber and nutrients to power you through these upcoming cooler months.
Ingredients
- 1 tablespoon vegetable oil
- 1 15 oz can cannellini beans, drained and rinsed
- 1 small yellow onion, diced
- 1 cup canned crushed tomatoes
- 1 cup baby spinach
- 2 garlic cloves, chopped
- 1 tablespoon basil
- 1 teaspoon pepper
- 1 teaspoon paprika
Directions
- In a medium saucepan, heat oil over a medium–high heat. Add onion and garlic to the pan and sauté for 3–4 minutes or until onion becomes translucent.
- Add crushed tomatoes, seasonings, baby spinach and beans. Stir to combine and cook for 5 minutes or until mixture begins to thicken and spinach is wilted.
- Pour mixture into a bowl. Serve with warmed pita bread.
