This tasty, hearty meal contains plenty of fiber and nutrients to power you through these upcoming cooler months.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 15 oz can cannellini beans, drained and rinsed
  • 1 small yellow onion, diced
  • 1 cup canned crushed tomatoes
  • 1 cup baby spinach
  • 2 garlic cloves, chopped
  • 1 tablespoon basil
  • 1 teaspoon pepper
  • 1 teaspoon paprika

Directions

  1. In a medium saucepan, heat oil over a medium–high heat. Add onion and garlic to the pan and sauté for 3–4 minutes or until onion becomes translucent.
  2. Add crushed tomatoes, seasonings, baby spinach and beans. Stir to combine and cook for 5 minutes or until mixture begins to thicken and spinach is wilted.
  3. Pour mixture into a bowl. Serve with warmed pita bread.
