This jicama apple slaw makes for a great fall side dish, at home or at a party!
Ingredients
- 2 cups jicama, peeled and sliced into thin sticks
- 1 medium green apple, grated
- 1 small carrot, grated
- 1 tbsp fresh lemon juice
- ½ cup Greek yogurt
- 1 tbsp honey
- 1 tsp ginger, peeled and grated
Directions
- Peel and slice jicama into thin sticks.
- Grate apple and carrot into a medium bowl. Add the sliced jicama sticks.
- Pour lemon juice over slaw mixture and gently mix.
- In a separate small bowl, add Greek yogurt, honey and ginger. Stir together to combine.
- Add Greek yogurt sauce to slaw mixture and mix with a large spoon.
- Refrigerate for at least 1 hour and serve cold.
- Save in an airtight container in the fridge for up to 4 – 5 days.
- Enjoy as a refreshing side or snack.
