This jicama apple slaw makes for a great fall side dish, at home or at a party!

Ingredients

  • 2 cups jicama, peeled and sliced into thin sticks
  • 1 medium green apple, grated
  • 1 small carrot, grated
  • 1 tbsp fresh lemon juice
  • ½ cup Greek yogurt
  • 1 tbsp honey
  • 1 tsp ginger, peeled and grated

Directions

  • Peel and slice jicama into thin sticks.
  • Grate apple and carrot into a medium bowl. Add the sliced jicama sticks.
  • Pour lemon juice over slaw mixture and gently mix.
  • In a separate small bowl, add Greek yogurt, honey and ginger. Stir together to combine.
  • Add Greek yogurt sauce to slaw mixture and mix with a large spoon.
  • Refrigerate for at least 1 hour and serve cold.
  • Save in an airtight container in the fridge for up to 4 – 5 days.
  • Enjoy as a refreshing side or snack.
