Make this flavorful, nutrient-packed dish for lunch or dinner or as a meal prep for the week.

Ingredients

  • 1 tsp olive oil
  • 2 cloves garlic, sliced
  • ¼ tsp smoked paprika
  • 2 cups fresh spinach, kale, or other greens
  • 1 can (15oz) cannellini beans, drained
  • ¾ cup low sodium vegetable broth
  • Black pepper to taste

Directions

  1. In a large sauté pan, heat olive oil.
  2. Add garlic. Sauté until fragrant, but not brown.
  3. Stir in beans and vegetable broth. Bring to a boil.
  4. Add the greens, stir, and allow to begin to wilt.
  5. Remove from heat when greens begin to soften.
  6. Stir in paprika, add pepper to taste.
