Ingredients
- 1 tsp olive oil
- 2 cloves garlic, sliced
- ¼ tsp smoked paprika
- 2 cups fresh spinach, kale, or other greens
- 1 can (15oz) cannellini beans, drained
- ¾ cup low sodium vegetable broth
- Black pepper to taste
Directions
- In a large sauté pan, heat olive oil.
- Add garlic. Sauté until fragrant, but not brown.
- Stir in beans and vegetable broth. Bring to a boil.
- Add the greens, stir, and allow to begin to wilt.
- Remove from heat when greens begin to soften.
- Stir in paprika, add pepper to taste.
