Cool off this summer with a tasty and nutritious parfait – great as breakfast, a snack or dessert.
Ingredients
- 1 cup low-fat plain or vanilla yogurt
- ¼ cup diced peaches in light syrup, drained
- ¼ cup oat crisp
Oat Crisp
- 1 cup oats
- ¼ cup honey
- 2 Tbsp vegetable oil
- 1 tsp cinnamon
- Pinch of salt
Directions
- Preheat oven to 350°F. Line cookie sheet with parchment paper or lightly coat with nonstick cooking spray.
- Combine ingredients for oat crisp in medium bowl. Spread evenly on the nonstick cookie sheet.
- Bake for 7-10 minutes or until oats are lightly browned. Let cool completely then break apart and store in airtight container.
- Add yogurt to a small bowl.
- Strain the diced peaches and add to the yogurt bowl.
- Sprinkle the oat crisp on top of the peaches.
Can be eaten immediately or made ahead. Prepped parfait will last 3-4 days in the fridge.
