Cool off this summer with a tasty and nutritious parfait – great as breakfast, a snack or dessert.

Ingredients

  • 1 cup low-fat plain or vanilla yogurt
  • ¼ cup diced peaches in light syrup, drained
  • ¼ cup oat crisp

Oat Crisp

  • 1 cup oats
  • ¼ cup honey
  • 2 Tbsp vegetable oil
  • 1 tsp cinnamon
  • Pinch of salt

Directions

  1. Preheat oven to 350°F. Line cookie sheet with parchment paper or lightly coat with nonstick cooking spray.
  2. Combine ingredients for oat crisp in medium bowl. Spread evenly on the nonstick cookie sheet.
  3. Bake for 7-10 minutes or until oats are lightly browned. Let cool completely then break apart and store in airtight container.
  4. Add yogurt to a small bowl.
  5. Strain the diced peaches and add to the yogurt bowl.
  6. Sprinkle the oat crisp on top of the peaches.

Can be eaten immediately or made ahead. Prepped parfait will last 3-4 days in the fridge.
