Ingredients
- 2 cups brussels sprouts
- 1 15 oz can chickpeas
- 1 cup shredded carrots
- 1 cup shredded green cabbage
- 2 shallots
- 1 tbsp cooking oil
Optional Spices
- 1 tsp ginger
- 1 tsp turmeric
- 1 tsp garlic
- 1 tbsp lemon juice
Directions
- Rinse brussels sprouts, carrots, and green cabbage.
- Chop brussels sprouts into 4ths long ways, peel and shred carrots, chop green cabbage and peel and finely chop shallots.
- Heat cooking oil in a large pan over medium heat, add shallots and cook for 2 minutes.
- Add in the brussels sprouts and sauté for 10 minutes.
- Stir in carrots and green cabbage and sauté for another 15 minutes.
- Sprinkle in spices of choice and stir to combine.
- Drain chickpeas and add to pan, stir for an additional 2-5 minutes, warming the chickpeas. Once chickpeas are heated through, serve immediately and enjoy!
