Ingredients

  • 2 cups brussels sprouts
  • 1 15 oz can chickpeas
  • 1 cup shredded carrots
  • 1 cup shredded green cabbage
  • 2 shallots
  • 1 tbsp cooking oil

Optional Spices

  • 1 tsp ginger
  • 1 tsp turmeric
  • 1 tsp garlic
  • 1 tbsp lemon juice

Directions

  1. Rinse brussels sprouts, carrots, and green cabbage.
  2. Chop brussels sprouts into 4ths long ways, peel and shred carrots, chop green cabbage and peel and finely chop shallots.
  3. Heat cooking oil in a large pan over medium heat, add shallots and cook for 2 minutes.
  4. Add in the brussels sprouts and sauté for 10 minutes.
  5. Stir in carrots and green cabbage and sauté for another 15 minutes.
  6. Sprinkle in spices of choice and stir to combine.
  7. Drain chickpeas and add to pan, stir for an additional 2-5 minutes, warming the chickpeas. Once chickpeas are heated through, serve immediately and enjoy!
