Power up with this quinoa burrito bowl, perfect for lunch or dinner.
Ingredients
- 1 cup uncooked quinoa – any kind
- 1 15 oz can of corn
- 1 15 oz can of black beans
- 1 cup of jarred salsa (low sodium)
- Cumin to taste
- Black pepper to taste
Optional Ingredients
- Hot sauce
- Brown rice
- Chickpeas
- Cilantro
- Spinach or any vegetables
Directions
- Cook quinoa in a large pot.
Quick Tip: One cup of quinoa requires 2 cups of water and let boil for 8-10 minutes. - Once quinoa is cooked allow to cool in a large bowl.
- Sauté corn and black beans with cumin and black pepper or any other desired spices and optional ingredients in a deep pan. Sauté for 2-4 minutes, until tender.
- Pour in cooked quinoa and salsa.
- Stir ingredients together and let simmer for 2-4 minutes.
- Let cool and enjoy!
