Ingredients
- ¾ cup canned low sodium chickpeas, drained
- ¼ cup canned brown lentils, drained
- ¼ cup whole wheat breadcrumbs
- 1 egg
- 1 garlic clove
- ½ small yellow onion, chopped
- ¼ cup fresh cilantro, chopped
- 1 teaspoon curry powder
- ¼ teaspoon ground cumin
- ½ teaspoon ground ginger
- ¼ teaspoon ground pepper
- Cooking spray
Directions
- Prepare your ingredients – drain and rinse chickpeas and lentils. Chop cilantro and yellow onion.
- Place all ingredients in a food processor and blend to a smooth consistency.
- Remove the blade from the food processor carefully. Roll the mixture into three balls and flatten into patties.
- In a medium pan, spray cooking spray and raise to medium heat. Once the pan is hot, cook patties for 2–3 minutes on each side or until lightly golden brown.
- Serve with sweet potato and side salad to make a complete meal. Top patties with plain non-fat Greek yogurt for a sauce.
