December is National Root Vegetable Month, and our partners at Sodexo are sharing one of their favorite recipes, roasted turnips with onion.

Roasted Turnips with Onion Recipe

Purple Top Turnips. Typically, about 3 medium purple top white globe turnips are used for this recipe. If you have all sorts of sized turnips, which is highly likely if they are growing them in your garden, then weigh them with a food scale, as you’ll need about 1.5 pounds. Sweet Onion. Sweet, caramelized onion is the secret key to make this turnip recipe so much better. You can go without, but you'll be missing out.

Balsamic Vinegar. The addition of balsamic vinegar helps cut down on some of the bitter flavor of turnips with its natural sugars. However, if you're following a low carb or Keto diet, just watch the balsamic vinegar you use, as some have more carbs than others.

Olive Oil. Not only does extra virgin olive oil work well for this recipe, but avocado oil is also great for roasted vegetables, especially when cooking in high temperatures.

Garlic Powder. I love to use granulated garlic, which is about the same, just a bit coarser and more concentrated in taste.

Sea Salt. Usually cooking salt is used, but you can use kosher salt as well. Just be sure to adjust to your liking at the end of cooking and taste before serving.

Pepper. Standard, fine, or coarse, ground black pepper is great.

Smoked Paprika. If you don't have smoked paprika, standard sweet paprika is fine. It just depends how much on the smoky flavor you like.

Unsalted Butter. Add about 4 tablespoons of butter to the dish before roasting. This is a great way to get a little more of the caramelized flavor and bring out the natural sweetness of the onion as well.

Optional. Drizzle a little lemon juice on the turnips after roasting, just before serving. Also, if you have a flourishing herb garden you can toss in some fresh herbs. Some chives, thyme or dill go great with turnips.

Ingredients List

  • 1.5 lbs turnips or 3-4 medium turnips (wash, trim stems, peel, and cut as you like)
  • 1 small to medium sized onion (slice thin)
  • 2 tablespoons of balsamic vinegar
  • 1.5 tablespoons of olive oil or avocado oil
  • 1 teaspoon of granulated garlic powder
  • ¾ teaspoon of sea salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of smoked paprika
  • 4 tablespoons of cold butter (cut into small cubes)

Oven Roasting Instructions

  • Preheat oven to 450 degrees.
  • Grab a 9 x13 inch baking dish (a glass Pyrex dish makes for easy cleaning).
  • Add turnips, onion, olive oil and balsamic to the dish and give it a stir.
  • Add the spices: garlic powder, salt, pepper and smoked paprika, and stir until evenly coated.
  • Top with cold butter, dispersed evenly.
  • Roast for 25-30 minutes uncovered, stirring halfway through. It's done once it's golden and caramelized looking. You can also test by cutting into it with a sharp knife. Adjust salt and pepper to your liking and enjoy!
