This is a wonderful warming and nutritious soup featuring our star of the month, Beets!!! Beets are loaded with nutrients such as Folate, Manganese, and Copper. They have also been found to help lower blood pressure, while being very low in calories. This soup is a great vehicle to adding more beets into your life!

Ingredients
- 3 Tbsp. Olive Oil
- 1 medium onion chopped
- 3 Tbsp. Ginger, peeled and finely grated
- 2 stalks of celery finely chopped
- 2 carrots peeled and diced
- 3 cloves garlic finely diced
- 1 medium potato peeled and chopped
- 6 medium beets peeled and diced (wear gloves!)
- 4 cups low sodium veggie or chicken broth
- Salt/pepper
- Plain fat free Greek yogurt
Directions
Heat oil in large saucepan, add onions, celery, ginger, and garlic and cook until soft (about 5 minutes), add carrots, potato, beets, and broth. Bring to a boil, then cover and simmer for about 40 minutes or until vegetables are soft. Add salt/pepper to taste. Allow to cool, then add to blender or food processer to blend until smooth.
Serve with a dollop of sour cream. Enjoy!
