Our Pineapple Chicken Burger recipe is the perfect combo of sweet and savory! We swap traditional ground beef for lean ground chicken breast to reduce the saturated fat content of a traditional burger. Grilled pineapple adds tons of flavor without adding salt and fat. Grill up a batch this weekend for the whole family!
Ingredients:
1 pound 93% lean ground chicken
¾ cup panko breadcrumbs
½ cup skim milk
¼ Vidalia onion, grated
¼ teaspoon cayenne pepper
1/8 teaspoon salt
1/8 teaspoon black pepper
6 sliced pineapple rings, canned in juice or water
6 lettuce leaves
6 whole wheat burger buns
Directions:
- Combine chicken, breadcrumbs, milk, grated onion, cayenne, salt and pepper in a large mixing bowl, careful not to overmix. Divide mixture into 6 patties and place on a plate or baking sheet. Refrigerate for 1 hour to firm up patties.
- Heat an outdoor grill or grill pan over medium heart. Spray with grill spray and add patties. Grill for 5-6 minutes per side until no longer pink in the center.
- Grill pineapple for 2-3 minutes per side until grill marks appear
- Assemble burgers: layer burgers, pineapple, and lettuce leaves on burger buns. Serve alongside a green salad and enjoy!
