Ingredients:
1 pound ground turkey (93% lean)
2/3 cup grape tomatoes, diced, divided
5 tablespoons balsamic vinegar, divided
¼ cup fresh basil, chopped
¼ teaspoon ground black pepper
5 tablespoons shredded part skim mozzarella cheese
5 whole wheat flat bread or buns
Directions:
- In a large mixing bowl, combine turkey, 1/3 cup tomatoes, 3 tablespoons of balsamic vinegar, 3 tablespoons basil, and black pepper. Mix until all ingredients are combined.
- Form 5 turkey patties by forming a ball in your hands and then flattening into patties. Set aside.
- Spray a large skillet with cooking oil. Add patties to the pan on medium heat. Cook for 5 minutes on each side (or until brown).
- Fill the bottom portion of the pan with the remaining 2 tablespoons of balsamic vinegar. Continue to cook patties for an additional 2 minutes on each side until the balsamic has been reduced and coats both sides of the burger.
- Top each burger with 1 tablespoon of mozzarella cheese. Cover pan with lid or tent with foil until cheese has fully melted.
- In a small bowl, toss together the remaining tomatoes and basil. Add the tomato basil combination and burger to the bun. Enjoy!
