2 cups gluten free flour
½ cup sugar
2 tablespoons brown sugar
1 tablespoon baking powder
1 egg
1 ¼ cup milk
2 teaspoons vanilla extract
¾ cup mini chocolate chips
Preheat oven to 400 degrees, prepare mini muffin tin. Mix flour, white sugar, brown sugar baking powder and salt together in a bowl. Lightly beat egg in a separate bowl; stir in milk, vegetable oil, and vanilla extract. Combine wet ingredients with dry ingredients, fold in chocolate chips. Fill muffin cups about ¾ full. Bake in a preheated oven for 15-18 minutes or until golden brown on the top and a toothpick comes out clean. Makes 30 mini muffins.
