½ cup melted butter
2 cups gluten free baking flour cup for cup
½ cup sugar
2 teaspoons baking powder
½ teaspoon salt
Juice from 1 lemon (about ¼ cup)
1 cup milk
4 cups fresh blueberries
1 teaspoon lemon zest
Preheat oven to 375 degrees, prepare a 9 X 13 pan with cooking spray. Pour melted butter into pan and set aside. Combine gluten free flour, sugar, baking powder and salt, whisk in milk and pour into baking dish. Top with blueberries and lemon juice and place in the center rack of oven. Bake for 45-50 minutes until golden brown and bubbling. Top with lemon zest and enjoy!
